Notes

For the absolute best "popcorn chicken" style texture, press and freeze your extra-firm tofu block solid, then thaw it completely before using. The ice crystals form tiny pockets inside, giving the tofu a spongy, chewy, and meaty bite that holds onto marinades like a dream.

Instead of slicing the tofu into uniform cubes with a knife, tear it into rough, bite-sized chunks with your hands. These irregular edges and crannies capture far more breading, giving you extra-crunchy jagged bits after frying or baking.

The pro tip to breading without a mess is using one hand for the wet mix and one for the dry mix.

To bake or air-fry, spray the nuggets lightly with oil and bake at 200°C for 15-25 minutes, shaking halfway through.

I made it yesterday and I love it! I didn't have the time to freeze the tofu - even though I love the texture - but it had to be quick and even without the frozen version and not proper panko , I really enjoyed it! Such good crunch & taste 👌🏼
